A quick and easy chicken parmesan recipe featuring tender chicken breasts, a crunchy breadcrumb coating, and gooey mozzarella cheese.

  • 4 boneless, skinless chicken breasts
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 can (28 oz) San Marzano crushed tomatoes
  • 2 cups shredded mozzarella cheese
  • Fresh basil for garnish
  • Olive oil for frying

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix panko breadcrumbs, grated Parmesan cheese, garlic powder, dried oregano, salt, and pepper together.
  3. Dredge each chicken breast in the breadcrumb mixture, ensuring an even coat on all sides.
  4. Heat olive oil in a large skillet over medium heat. Fry the chicken breasts for about 4-5 minutes on each side until they turn golden brown.
  5. Spread the crushed tomatoes evenly in a baking dish, then place the fried chicken breasts on top.
  6. Generously cover each piece of chicken with shredded mozzarella cheese.
  7. Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and golden.

Notes
