A delightful blend of crispy, cheesy chicken with marinara sauce that turns an ordinary weeknight dinner into something special.

  • 2 chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 eggs
  • Olive oil
  • Salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Generously season both sides of the chicken breasts with salt and pepper.
  3. In a bowl, beat the eggs until well combined.
  4. In another bowl, mix the breadcrumbs with the grated Parmesan cheese.
  5. Dip each chicken breast into the beaten eggs, letting any excess drip off, then coat them well in the breadcrumb mixture.
  6. Heat a splash of olive oil in a skillet over medium heat. Cook the chicken until golden brown on both sides, about 3-4 minutes per side.
  7. Place the chicken in a baking dish and pour marinara sauce over the top. Finish with a hefty layer of shredded mozzarella cheese.
  8. Bake for about 20-25 minutes, or until the chicken is fully cooked and the cheese is melted and bubbly.
  9. Serve hot, garnished with fresh basil if desired.

Notes

For a lighter version, you can bake the chicken without frying. Adding sautéed spinach or mushrooms to the marinara adds extra flavor.
