A quick and budget-friendly chicken dish featuring a crispy breadcrumb and Parmesan crust, topped with marinara sauce and melted mozzarella.

  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper in a medium bowl.
  3. Coat each chicken breast in the breadcrumb mixture thoroughly.
  4. Heat a generous splash of olive oil in a skillet over medium heat. Once hot, add the chicken and cook for about 4-5 minutes on each side until golden brown.
  5. Transfer the chicken breasts to a baking dish. Top each piece with marinara sauce and a sprinkle of shredded mozzarella cheese.
  6. Bake in the preheated oven for 20-25 minutes until the chicken is fully cooked, and the cheese is melty and bubbly.
  7. Serve hot, freshly prepared over spaghetti or with a crisp garden salad.

Notes

For extra crunch, try double-dipping the chicken. Marinating the chicken in Italian dressing enhances flavor.
