Easy Chicken Parmesan is a comforting dish featuring crispy chicken, rich marinara, and gooey mozzarella cheese, perfect for family dinners or cozy nights at home.

  • 2 large boneless skinless chicken breasts
  • ¼ cup vegetable oil (or as needed)
  • Salt and pepper to taste
  • ½ cup all-purpose flour
  • 1½ teaspoons seasoned salt
  • ¼ teaspoon black pepper
  • 2 eggs, beaten
  • ½ teaspoon garlic powder
  • 1½ cups panko breadcrumbs
  • ⅓ cup freshly grated Parmesan cheese
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • 1 cup marinara sauce
  • 1½ cups shredded mozzarella cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the chicken: Slice each chicken breast in half lengthwise to create cutlets. Pound each cutlet to about ½ inch thick and season with salt and pepper.
  2. Set up the breading station: In three shallow bowls, fill one with flour, another with beaten eggs mixed with garlic powder, and the last with panko breadcrumbs combined with Parmesan, parsley, and oregano.
  3. Bread the chicken: Dredge each chicken cutlet in flour, dip it into the egg mixture, and coat it evenly with the breadcrumb mixture.
  4. Fry the chicken: Heat vegetable oil in a skillet over medium-high heat and fry each cutlet for about 3-4 minutes on each side until golden brown and crispy. Transfer to a paper towel-lined plate.
  5. Bake and top: Preheat the oven to 425°F (220°C). Place fried cutlets on a baking sheet, spoon marinara sauce on top, sprinkle mozzarella cheese, and bake for 12-15 minutes or until bubbly.
  6. Finish and serve: Garnish with fresh chopped parsley and serve alongside pasta or a crisp salad.

Notes

For an extra crunchy coating, consider using a mixture of regular breadcrumbs and panko. Store leftovers in an airtight container for up to 3 days.
