A quick and comforting chicken parmesan dish with crispy cutlets, marinara sauce, and melted mozzarella, perfect for weeknight dinners or special occasions.

  • 2 large boneless skinless chicken breasts
  • Salt and pepper, to taste
  • ½ cup flour
  • 1 ½ teaspoons seasoned salt
  • ¼ teaspoon pepper
  • 2 eggs (beaten until frothy)
  • ½ teaspoon garlic powder
  • 1 ½ cups panko breadcrumbs
  • 1/3 cup freshly grated Parmesan cheese
  • 1 teaspoon dried parsley
  • 1 teaspoon dried oregano
  • ¼ cup vegetable oil (or as needed for frying)
  • 1 cup marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare your breading station by combining flour with seasoned salt, pepper, and garlic powder in shallow dishes, having beaten eggs ready, and mixing panko breadcrumbs with Parmesan, parsley, and oregano in another dish.
  3. Slice the chicken breasts into thin cutlets and pound them to about ½ inch thick for even cooking. Season lightly with salt and pepper.
  4. Dredge each chicken cutlet in the flour mixture, dip into the eggs, and press into the breadcrumb mixture for even coating.
  5. Heat vegetable oil in a skillet over medium-high heat. Fry the chicken for approximately 3-4 minutes per side or until golden brown and crispy.
  6. Once cooked, place the fried chicken cutlets on a wire rack to cool slightly.
  7. On a baking sheet, spoon marinara sauce over the chicken and top generously with shredded mozzarella.
  8. Bake for 12 minutes in your preheated oven; broil for an additional 1-2 minutes for a bubbly, golden top.
  9. Garnish with fresh parsley and serve hot alongside spaghetti and garlic bread.

Notes

For best results, ensure your oil is hot before frying to achieve a crispy crust, and do not rush the breading process.
