Easy Dinner Casserole

A cheesy, hearty meal that comes together quickly, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 2 cups cooked pasta
  • 2 cups shredded cheese
  • 1 can diced tomatoes
  • 1 can cream of mushroom soup
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef in a large skillet over medium heat until browned. Drain any excess fat.
  3. Add the chopped onion and bell pepper to the skillet and sauté until softened and fragrant.
  4. Combine the cooked pasta, diced tomatoes, cream of mushroom soup, and the beef mixture in a large bowl. Stir in half of the shredded cheese.
  5. Pour the mixture into a greased 9×13 baking dish.
  6. Top the casserole with the remaining cheese.
  7. Cover the dish with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden brown.
  9. Let the casserole cool for a few minutes before serving.

Notes

For an extra creamy casserole, mix in a dollop of sour cream or cream cheese. Make sure to drain the diced tomatoes well to avoid a watery casserole.
