These Easy Egg Bites are a delicious and convenient breakfast option, perfect for a busy lifestyle while being customizable to your taste.

  • 8 eggs
  • 1/2 cup half-and-half or milk
  • 1/4 cup diced green pepper
  • 1/4 cup green onions
  • 1/4 cup chopped spinach
  • 3/4 cup diced ham or bacon (cooked), divided
  • 3/4 cup shredded cheddar cheese, divided
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

  1. Preheat your oven to 350°F and lightly grease a muffin tin or silicone muffin cups with cooking spray.
  2. Chop the vegetables: Dice the green peppers, green onions, and spinach, and prepare your choice of cooked bacon or ham.
  3. Assemble the filling: Divide the diced green peppers, green onions, chopped spinach, and 1/2 cup of your cooked meat among the muffin cups.
  4. Mix the egg base: In a medium bowl, whisk together the eggs, half-and-half (or milk), salt, pepper, and 1/2 cup of the shredded cheese.
  5. Pour the egg mixture: Fill each muffin cup with the egg mixture, filling them about three-quarters full.
  6. Top it off: Sprinkle the reserved meat and the remaining cheese on top of each cup.
  7. Bake: Place the muffin tin in the oven and bake for 18-20 minutes. At the 18-minute mark, check to see if the centers are set. If they still jiggle, continue baking in 2-minute increments until done.
  8. Serve warm: The egg bites will puff up during baking but may deflate slightly after being removed from the oven. Enjoy them warm!
