Easy Egg Roll in a Bowl

A quick and satisfying dish that captures all the flavors of traditional egg rolls without the frying mess.

Ingredients

  • 1 lb ground pork or turkey
  • 1 bag coleslaw mix
  • 2 tablespoons soy sauce
  • 2 teaspoons sesame oil
  • 2 green onions, sliced
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • Salt and pepper to taste

Instructions

  1. Heat a large skillet over medium heat and add the ground pork (or turkey). Cook until browned, draining off any excess fat.
  2. Stir in the minced garlic and ginger, cooking for 1-2 minutes until fragrant.
  3. Toss in the coleslaw mix and cook for 3-5 minutes until the cabbage softens.
  4. Pour in the soy sauce and sesame oil, mixing well and cooking for another 2-3 minutes.
  5. Season with salt and pepper to taste, and garnish with sliced green onions before serving.

Notes

Store leftovers in an airtight container for 3-4 days. Reheat in the microwave or in a skillet over low heat.
