A soft, moist carrot cake made without flour, featuring the warm flavors of cinnamon and sweet carrots, perfect for any occasion.

Ingredients

  • 2 eggs
  • ½ cup honey
  • 2 carrots, shredded
  • 1 cup oats
  • ½ tsp baking soda
  • 1 tbsp cinnamon
  • ¼ cup butter, room temperature
  • 1 tsp vanilla

Instructions

  1. Preheat your oven to 180°C (300°F).
  2. In a large bowl, combine all ingredients except for the shredded carrots. Blend everything with an immersion blender until smooth.
  3. Gently fold in the shredded carrots until they’re evenly mixed into the batter.
  4. Line a small 7×7-inch (about 18 cm) baking pan with parchment paper.
  5. Pour the batter into the prepared pan, spreading it out evenly.
  6. Bake in your preheated oven for 20-30 minutes. Check for doneness by inserting a toothpick—it should come out clean.
  7. Once baked, allow the cake to cool in the pan before slicing it up for enjoyment.

Notes

For a vegan option, substitute honey with maple syrup and butter with coconut oil.
