A comforting and easy-to-prepare version of classic Chicken Parmesan, perfect for weeknight dinners.

Ingredients

Scale
  • 2 large chicken breasts, sliced horizontally into 4 pieces
  • 1 cup fine breadcrumbs (plain or Italian-style)
  • ½ cup grated Parmesan cheese plus extra for topping
  • 1 tsp garlic powder
  • 1 large egg, beaten
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella
  • Salt and black pepper to taste
  • Olive oil spray or 1 tbsp olive oil
  • Optional: Dried oregano, basil, red pepper flakes, fresh basil or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the chicken breasts into 4 thin pieces. Season them generously with salt and pepper.
  3. In a bowl, beat the egg; in another bowl, combine the breadcrumbs, grated Parmesan, garlic powder, and additional salt and pepper.
  4. Dip each piece of chicken into the beaten egg, letting any excess drip off, then coat thoroughly with the breadcrumb mixture.
  5. Arrange the coated chicken pieces on a greased baking sheet. A light spritz of olive oil on top will enhance crispiness.
  6. Bake in the preheated oven for about 20 minutes, flipping the chicken halfway through for even cooking.
  7. Remove from the oven and generously top each piece with marinara sauce and shredded mozzarella. Add an extra sprinkle of Parmesan on top for good measure.
  8. Return to the oven for an additional 5–10 minutes, or until the cheese is melted and bubbly.

Notes

Serve it over spaghetti or with a fresh green salad. Drizzle with olive oil and sprinkle with fresh basil or parsley for added flavor.
