Delightful veggie chaffles made with shredded zucchini and carrots, bound together with eggs and cheese. Perfect for brunch or a light dinner!

  • 1 cup shredded carrots
  • 2 large eggs
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/4 cup almond flour (or flour of your choice)
  • Salt and pepper to taste
  • Olive oil or cooking spray for the waffle maker

Instructions

  1. Preheat your waffle maker.
  2. In a medium bowl, combine the shredded zucchini, shredded carrots, eggs, cheese, almond flour, salt, and pepper. Mix until everything is well combined.
  3. Lightly grease the waffle maker with olive oil or cooking spray to prevent sticking.
  4. Pour the veggie mixture into the waffle maker, spreading it evenly for consistent cooking.
  5. Close the waffle maker and cook for about 3-5 minutes, until the chaffles are golden brown and crispy.
  6. Carefully remove the chaffles and serve warm.
