A nostalgic and creamy egg salad sandwich, perfect for lunch or a light dinner.

Ingredients

  • 6 hard-boiled eggs, chopped
  • 1/4 cup mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • 2 slices of bread
  • Lettuce (optional)
  • Tomato slices (optional)

Instructions

  1. Place the chopped hard-boiled eggs in a medium bowl.
  2. Add in the mayonnaise, mustard, lemon juice, and season with salt and pepper to taste.
  3. Gently mix the ingredients until creamy yet slightly chunky.
  4. Spread the egg salad onto one slice of bread.
  5. Optionally, add a layer of lettuce and fresh tomato slices on top.
  6. Close the sandwich with the second slice of bread, slice it in half, and serve immediately.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-5 days. Best enjoyed cold.
