  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 4 large eggs

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Squeeze out any excess moisture from the grated potatoes.
  3. In a bowl, mix the grated potatoes with oil, salt, and pepper until well combined.
  4. Grease a muffin tin and firmly pack the potato mixture into the bottom and sides of each cup, forming a basket.
  5. Bake for 25-30 minutes until the potatoes are golden brown and crispy.
  6. Carefully crack an egg into each hash brown basket.
  7. Return the tin to the oven and bake for another 10-15 minutes, or until the eggs are set to your liking.
