Delicious and protein-packed muffins made with cottage cheese, cheddar, and spinach, perfect for breakfast or brunch.

  • 1 cup cottage cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/3 cup chopped spinach
  • 1/4 cup diced red bell pepper
  • 1 tablespoon finely chopped chives
  • Salt and pepper, to taste
  • Cooking spray or muffin liners

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a muffin tin with cooking spray or line it with muffin liners.
  3. Whisk the eggs in a large mixing bowl until well beaten.
  4. Add the cottage cheese, shredded cheddar, and grated parmesan, stirring until smooth.
  5. Fold in the chopped spinach, diced red bell pepper, and chives.
  6. Season with salt and pepper to taste.
  7. Pour the egg mixture into the muffin tin, filling each cup about three-quarters full.
  8. Bake for 20-25 minutes or until the muffins are set and lightly golden.
  9. Allow them to cool before transferring to a wire rack.
  10. Enjoy them warm or store in the refrigerator for later!
