  • 2 tbsp granulated sugar

  • 3/4 cup milk (or dairy alternative)
  • 1 large egg
  • 2 tbsp melted butter (or oil)
  • 1 tsp vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
  2. In another bowl, mix the milk, egg, melted butter, and vanilla extract until smooth and creamy.
  3. Pour the wet mixture into the dry ingredients. Gently stir until just combined.
  4. Heat a non-stick skillet over medium heat. Pour small amounts of batter onto the skillet to form the mini pancakes.
  5. Cook for 1-2 minutes, or until bubbles form on the surface. Flip and cook until golden brown on both sides.
  6. Remove from skillet and serve warm with toppings of your choice.

Notes

For a dairy-free version, use oat milk. Avoid over-mixing to keep the pancakes fluffy.
