  • 2 large Eggs
  • 0.75 cup Milk
  • 0.5 cup Plain Yogurt or Sour Cream
  • 2 tablespoons Unsalted Butter (melted)
  • 1 teaspoon Vanilla Extract (optional)

Instructions

  1. In a large bowl, whisk the flour, sugar (if using), baking powder, baking soda, and salt together until well combined.
  2. In a separate bowl, beat the eggs, then mix in the milk, yogurt, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry mixture and stir gently until just combined. Don’t worry about small lumps; they’re perfectly fine!
  4. Heat a non-stick skillet over medium heat and lightly grease the surface.
  5. Spoon small dollops of batter into the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Repeat with the remaining batter, and serve warm with your favorite toppings.

Notes

To achieve perfectly fluffy bites, avoid overmixing the batter; a few lumps are desirable. Let the batter rest for about 5 minutes before cooking for the best results.
