Delightful pancakes made with sweet potatoes for a comforting breakfast experience.

Ingredients

  • 1 cup mashed sweet potatoes
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Combine the mashed sweet potatoes, flour, baking powder, sugar, and salt in a mixing bowl to make your dry mix.
  2. Whisk together the milk, egg, melted butter, and vanilla extract in a separate bowl until well combined.
  3. Pour the wet ingredients into the dry mix and stir gently, being careful not to overmix.
  4. Heat a skillet over medium heat and lightly grease it with cooking spray or butter.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on the surface.
  6. Flip the pancakes and cook until golden brown.
  7. Serve warm with your favorite toppings.

Notes
