Delicious and adaptable freezer breakfast burritos, perfect for busy mornings.

Ingredients

  • 12 large eggs
  • 1/2 cup milk
  • 1 pound breakfast sausage, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 12 (10-inch) flour tortillas
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Whisk together the eggs, milk, salt, and pepper until smooth.
  2. Heat the vegetable oil in a non-stick skillet over medium heat.
  3. Pour the egg mixture into the skillet and cook, stirring occasionally, until set but slightly moist. Remove from heat.
  4. Warm the tortillas in the microwave for about 30 seconds.
  5. Lay each tortilla flat and top with scrambled eggs, crumbled sausage, and a sprinkle of cheeses.
  6. Fold in the sides of the tortilla and roll tightly to form a burrito.
  7. Wrap each burrito in plastic wrap and then in aluminum foil.
  8. Store in a freezer-safe bag or container. These can be frozen for up to 3 months.
  9. To reheat, remove the foil and wrap in a damp paper towel, then microwave on high for 1-2 minutes, or until warmed through.

Notes

Customize with your choice of cheese or add sautéed vegetables for a vegetarian option.
