Delicious and convenient breakfast sandwiches that can be made in advance and frozen for quick meals.

Ingredients

  • 12 eggs
  • 2 tablespoons milk
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 12 slices cooked bacon or sausage patties or ham
  • 12 English muffins
  • 12 slices cheddar cheese

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Grease a 9×13-inch pan generously to prevent sticking.
  3. Whisk together the eggs, milk, salt, and pepper in a large bowl until well combined.
  4. Pour the egg mixture into the prepared pan, spreading it evenly.
  5. Bake for 18-22 minutes, or until the center is just set.
  6. Cool the baked mixture for a few minutes.
  7. Cut the baked eggs into 12 equal squares.
  8. Assemble each English muffin: place a square of egg, a slice of cheese, and your choice of meat between the halves.
  9. Heat the sandwiches in a 350°F (175°C) oven for about 5 minutes if serving immediately.
  10. Wrap each sandwich tightly in foil or plastic wrap if freezing.
  11. Reheat by unwrapping and baking in the oven at 350°F for 15-20 minutes or microwaving for 1-2 minutes.
