A delightful, healthy treat made with creamy Greek yogurt and a wholesome granola base, perfect for any time of day.

Ingredients

  • 3/4 cup oats
  • 1/2 tsp cinnamon
  • 1/4 cup almond butter
  • 34 tbsp honey
  • 1 tsp vanilla extract
  • 1 1/2 cups Greek yogurt
  • Berries of choice for topping

Instructions

  1. In a mixing bowl, combine the oats, cinnamon, almond butter, honey, and vanilla extract. Stir until you achieve a sticky dough; adjust with more almond butter or honey if necessary.
  2. Line a muffin pan with muffin liners and press the granola dough evenly into the base of each cup.
  3. Spoon Greek yogurt into each cup and smooth out the top.
  4. Top with your favorite berries and a sprinkle of extra granola, if desired.
  5. Freeze the cups for at least four hours. Let them thaw slightly before serving.

Notes

Store leftovers in an airtight container in the freezer for up to 2-3 weeks. Let them sit out for a few minutes at room temperature before serving.
