A quick and delicious Garlic Herb Chicken dish, perfect for weeknight dinners with comforting flavors and creamy mashed potatoes.

  • 4 boneless skinless chicken breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 2 pounds russet potatoes
  • 1/2 cup heavy cream
  • 2 tablespoons brown sugar
  • 1 tablespoon balsamic vinegar

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt and pepper.
  2. Mix the minced garlic, parsley, and thyme in a small bowl. Rub this aromatic mixture over the chicken breasts. Allow them to rest for about 10 minutes to absorb the flavors.
  3. Heat the olive oil in a skillet over medium-high heat. Once hot, add the chicken. Sear for 5-6 minutes until golden brown, then flip and cook for another 5-6 minutes, basting occasionally with the melted butter for extra flavor.
  4. Remove the chicken from the skillet and keep warm.
  5. Add the brown sugar and balsamic vinegar to the same skillet. Stir until the sugar dissolves completely.
  6. Pour in the chicken broth, bringing the mixture to a simmer. Cook until it reduces by half, concentrating the flavors.
  7. Boil the potatoes in salted water until tender. Drain and mash with the butter and heavy cream until smooth and creamy.
  8. Serve by placing the chicken on a bed of mashed potatoes and drizzling the flavorful sauce over the top.

Notes

For a twist on flavor, consider adding a teaspoon of Dijon mustard to the sauce. You can also use sweet potatoes instead of russet potatoes for a sweeter flavor.
