A delightful dish combining juicy garlic herb chicken with creamy mashed potatoes and sweet glazed carrots, perfect for family gatherings or weeknight dinners.

Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 4 cups carrots, sliced
  • 2 tablespoons brown sugar
  • 2 tablespoons butter (for glazing carrots)
  • Salt and pepper to taste (for carrots)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add in the minced garlic, thyme, rosemary, salt, and pepper. Stir until combined.
  3. Sear the chicken breasts in the skillet for about 3-4 minutes on each side until they are golden brown.
  4. Transfer the chicken to the preheated oven and bake for 20-25 minutes, or until fully cooked.
  5. While the chicken bakes, fill a pot with salted water and bring it to a boil. Add the cubed potatoes and cook until tender.
  6. Drain the potatoes, then mash them with milk and butter; season with salt and pepper to taste.
  7. In another pan, melt 2 tablespoons of butter over medium heat. Add the sliced carrots and brown sugar, cooking until the carrots are tender and glazed.
  8. Serve the chicken alongside the creamy mashed potatoes and glazed carrots.

Notes

For an extra burst of flavor, marinate the chicken in the olive oil and herbs for a few hours before cooking.
