A comforting meal featuring succulent garlic herb chicken, creamy mashed potatoes, and sweet glazed carrots, perfect for any weeknight dinner.

  • 4 boneless, skinless chicken breasts
  • 4 cloves of garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 tablespoon butter
  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons butter
  • 1 pound carrots, peeled and sliced into coins
  • 2 tablespoons honey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine minced garlic, chopped thyme, and rosemary with olive oil. Season with salt and pepper.
  3. Rub this garlic herb mixture all over the chicken breasts, ensuring they are well coated.
  4. Heat a large ovenproof skillet over medium-high heat. Add butter and let it melt until sizzling.
  5. Sear the chicken breasts for about 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. While the chicken bakes, bring a pot of salted water to a boil. Add the cubed potatoes and cook for 15-20 minutes until tender.
  8. Once soft, drain the potatoes and return them to the pot. Add milk, 4 tablespoons of butter, and season with salt and pepper. Mash until smooth and creamy.
  9. In a medium skillet over medium heat, melt 2 tablespoons of butter. Add the sliced carrots and sauté for 5-6 minutes until they begin to soften.
  10. Drizzle the carrots with honey and season with salt and pepper. Cook for an additional 3-4 minutes until glazed and tender.
  11. Serve the juicy chicken alongside the creamy mashed potatoes and sweet glazed carrots. Enjoy!

Notes

For added flavor, consider drizzling some of the pan juices over the chicken. Substitute herbs or potatoes as desired for personal preference.
