A comforting and satisfying dish featuring succulent chicken thighs and tender baby potatoes, flavored with garlic and Parmesan.

Ingredients

Scale
  • 4 chicken thighs
  • 2 cups baby potatoes, halved
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, minced garlic, Italian seasoning, salt, and pepper. Mix well to create a flavorful marinade.
  3. Add the chicken thighs and halved baby potatoes to the bowl. Toss everything together until thoroughly coated in the marinade.
  4. Spread the chicken and potatoes evenly on a baking sheet for even cooking.
  5. Generously sprinkle grated Parmesan cheese over the top, ensuring every piece gets some cheesy goodness.
  6. Bake in the oven for 30-35 minutes, or until the chicken is fully cooked and the potatoes are tender and golden. Use a meat thermometer to ensure the chicken reaches 165°F (74°C).
  7. Garnish with fresh parsley before serving. Enjoy your delicious meal!

Notes

For extra crispy skin on the chicken thighs, broil for the last 2-3 minutes of cooking. Feel free to experiment with herbs and veggies to make the dish your own.
