A delightful combination of tender chicken thighs and flavorful baby potatoes, all coated in a garlic-infused parmesan crust, making it an easy weeknight dinner.

  • 4 chicken thighs
  • 2 cups baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the olive oil, minced garlic, salt, black pepper, and Italian seasoning until well combined.
  3. Add the chicken thighs and halved baby potatoes to the bowl. Toss everything so they’re evenly coated with the seasoning mix.
  4. Spread the chicken and potatoes out in a single layer on a baking sheet.
  5. Evenly sprinkle the grated parmesan cheese over the chicken and potatoes.
  6. Bake in the preheated oven for approximately 30-35 minutes, or until the chicken is cooked through (reaching an internal temperature of 165°F or 75°C) and the potatoes are tender.
  7. Serve warm and enjoy your easy weeknight meal!

Notes

To keep leftovers fresh, store in an airtight container in the refrigerator for about 3-4 days. Reheat in the oven at 350°F (175°C) for about 15 minutes.
