  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 1 cup chicken broth
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Start by washing and halving the baby potatoes.
  2. Next, mince the garlic cloves and set them aside.
  3. Rub the chicken breasts with olive oil, followed by seasoning them with Italian seasoning, salt, black pepper, and red pepper flakes if you’re using them.
  4. Place the halved potatoes at the bottom of the crockpot.
  5. Lay the seasoned chicken breasts right on top of the potatoes.
  6. Pour the chicken broth over both the chicken and potatoes.
  7. Sprinkle the minced garlic and grated Parmesan cheese all over the top.
  8. Cover the crockpot and cook on low for 6–7 hours or high for 3–4 hours.
  9. Ensure the chicken reaches an internal temperature of 165°F, and the potatoes are fork-tender.
  10. Serve garnished with fresh parsley if desired.
