A delightful dish that marries crispy chicken with gooey cheese and rich marinara sauce, perfect for weeknight dinners or special occasions.

Ingredients

  • 1 tablespoon of olive oil
  • 1 teaspoon of chopped fresh thyme
  • 1 teaspoon of chopped fresh rosemary
  • 1 teaspoon of chopped fresh Italian parsley
  • 4 chicken cutlets (about 3 ounces each)
  • 1 teaspoon of salt
  • ½ teaspoon of freshly ground black pepper
  • ¾ cup of marinara sauce
  • ¼ cup of shredded mozzarella cheese
  • 8 teaspoons of grated Parmesan cheese
  • 1 tablespoon of unsalted butter, cut into small pieces

Instructions

  1. Preheat the oven to 500°F.
  2. Create the herb oil by mixing olive oil, thyme, rosemary, and parsley in a small bowl.
  3. Prepare the chicken by brushing herb oil on both sides and seasoning with salt and pepper.
  4. Sear the chicken cutlets in a hot ovenproof skillet for about 1 minute on each side until golden brown.
  5. Add marinara sauce over each cutlet and sprinkle with mozzarella and Parmesan cheese.
  6. Dot with small pieces of butter on top of the cheese.
  7. Bake in the preheated oven for about 5 minutes until cheese is melted and bubbly.
  8. Serve hot with extra marinara sauce on the side for dipping.

Notes

This recipe is easy to customize with other herbs or cheeses. Serve over spaghetti or with garlic bread for a complete meal.
