  • 1 cup White Rice
  • 2 pieces Ripe Avocados
  • 1/4 cup Honey
  • 3 tablespoons Lime Juice
  • 2 tablespoons Soy Sauce
  • 1/2 cup Red Onion
  • 1/4 cup Fresh Herbs (Cilantro/Parsley)
  • 1 teaspoon Black Pepper
  • 2 tablespoons Olive Oil
  • 1/4 cup Honey Lime Glaze

Instructions

  1. Start by cooking the rice according to package instructions; set aside once done.
  2. In a bowl, combine honey, lime juice, soy sauce, and black pepper.
  3. Coat the chicken breasts in the marinade, making sure they are well covered.
  4. Heat olive oil in a skillet over medium-high heat.
  5. Add the marinated chicken to the skillet. Cook each side for about 6-7 minutes until golden brown and thoroughly cooked.
  6. Remove the chicken from the skillet and let it rest for a few moments before slicing.
  7. In the same skillet, sauté diced red onion for about 3-4 minutes until softened and fragrant.
  8. Slice the avocados while the onions cook.
  9. In a bowl, layer the cooked rice, sautéed onions, sliced chicken, and avocados.
  10. Drizzle the honey lime glaze over the top and garnish with fresh herbs before serving.

Notes

Let the chicken rest to retain moisture. For spice, add red pepper flakes to the marinade.
