This gluten-free chicken parmesan captures the essence of comfort food with crispy chicken, rich marinara, and melty cheese.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup gluten-free breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 large eggs
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh basil for garnish (optional)
  • Olive oil for frying

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix gluten-free breadcrumbs, grated Parmesan, garlic powder, onion powder, salt, and pepper together in a shallow dish.
  3. Beat the large eggs in another bowl until blended.
  4. Dip each chicken breast into the beaten eggs, coating completely.
  5. Roll the chicken breasts in the breadcrumb mixture until well-covered.
  6. Heat a splash of olive oil in a large skillet over medium-high heat.
  7. Fry the chicken breasts for about 4-5 minutes on each side, or until golden brown.
  8. Transfer the fried chicken to a baking dish.
  9. Pour marinara sauce over each piece, then sprinkle shredded mozzarella cheese on top.
  10. Bake for 20-25 minutes, or until thoroughly cooked and the cheese is melted and bubbly.
  11. Garnish with fresh basil before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to maintain crispiness.
