A quick and easy gluten-free cinnamon roll made in a mug, ready in just minutes.

Ingredients

  • 1/4 cup gluten-free pancake mix
  • 1/4 tsp baking powder
  • 2 tbsp almond milk (plus more, if needed)
  • 1 tbsp maple syrup
  • 1 tsp coconut oil
  • Pinch of sea salt
  • 2 tsp coconut sugar
  • 1/4 tsp cinnamon
  • 2 tbsp powdered sugar
  • 1 tsp almond milk (for glaze)

Instructions

  1. Start by greasing a shallow mug or ramekin to avoid any sticking.
  2. In your greased mug, combine the gluten-free pancake mix, baking powder, almond milk, maple syrup, coconut oil, and a pinch of sea salt. Mix until everything is smooth; add a splash more almond milk if the batter feels too thick.
  3. In a separate bowl, mix together the coconut sugar and cinnamon for your cinnamon sugar mixture.
  4. Sprinkle this cinnamon-sugar blend over your batter and use a knife or chopstick to gently swirl it in.
  5. Microwave the mug for about 1 to 1.2 minutes; keep an eye on it to prevent overflowing.
  6. Prepare the glaze by whisking together the powdered sugar and remaining almond milk until smooth.
  7. Once the mug is out of the microwave, drizzle the glaze over the warm roll. Enjoy it immediately while it’s still gooey!

Notes

To achieve the perfect texture, avoid over-microwaving. Customize with chocolate chips or different spices as desired.
