A comforting dish that combines crispy fried chicken with gooey cheese and rich tomato sauce, perfect for family dinners and special occasions.

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 large eggs
  • 2 tbsp all-purpose flour (more if needed)
  • 1 cup panko breadcrumbs (more if needed)
  • ¾ cup grated Parmesan cheese, divided
  • ½ cup olive oil, for frying
  • ½ cup prepared tomato sauce
  • ¼ cup fresh mozzarella, cubed
  • ½ cup provolone cheese, grated
  • ¼ cup fresh basil, chopped
  • 2 tsp olive oil, for drizzling

Instructions

  1. Start by pounding the chicken breasts to an even ½-inch thickness, seasoning them generously with salt and pepper. Then, dredge each piece in flour until lightly coated.
  2. In one bowl, beat the eggs. In another, mix the panko breadcrumbs with half of the grated Parmesan. Dip each chicken breast into the egg, ensuring it’s well coated, and then into the breadcrumb-Parmesan mixture. Set aside to allow the coating to adhere.
  3. Heat olive oil in a skillet over medium heat. Once hot, carefully fry the chicken for about 2 minutes on each side or until they’re golden brown.
  4. Transfer the fried chicken to a baking dish. Spoon the prepared tomato sauce over each piece, then sprinkle with mozzarella, the remaining Parmesan, provolone, and chopped basil. Drizzle with olive oil for added richness.
  5. Bake in a preheated oven at 230°C (450°F) for 15–20 minutes, or until the cheese is beautifully bubbly and golden.
  6. Once baked, allow your masterpiece to rest for a few minutes before serving, garnished with additional fresh basil.

Notes

Serve with a side of spaghetti or a crisp garden salad. Store leftovers in an airtight container in the fridge for up to 3 days.
