  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 3 tbsp lemon juice
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cucumber, chopped
  • 2 tomatoes, chopped
  • 1/2 red onion, chopped
  • 1 bell pepper, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup tzatziki sauce
  • 1 cup quinoa or rice

Instructions

  1. Marinate the chicken. In a bowl, mix olive oil, minced garlic, lemon juice, salt, and black pepper. Coat the chicken breast well and let it marinate for at least 30 minutes.
  2. Cook the marinated chicken on a grill or stovetop until it reaches an internal temperature of 165°F (75°C), ensuring it’s fully cooked and juicy.
  3. While the chicken cooks, prepare your quinoa or rice according to the package instructions.
  4. Chop your fresh veggies: cucumber, tomato, red onion, and bell pepper.
  5. Once everything is ready, assemble the bowls. Begin with a base of quinoa or rice, then add sliced chicken, a variety of fresh veggies, and finish with crumbled feta cheese.
  6. Top it off with a generous dollop of tzatziki sauce. Serve immediately for the best flavor or store for meal prep later.

Notes

For extra depth, add a pinch of oregano or smoked paprika to the marinade. Use pre-cooked quinoa or microwavable rice to save time.
