A delightful Greek Chicken Marinade that elevates simple chicken thighs into a dish bursting with authentic Mediterranean flavor.

Ingredients

  • 1.5 lbs chicken thighs (boneless and skinless)
  • ½ cup plain Greek yogurt
  • Juice of ½ a lemon
  • 3 tbsp olive oil
  • 1.5 tsp salt
  • 3 cloves garlic (pressed)
  • ½ tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp onion powder
  • ¼ tsp red pepper flakes
  • 2 tbsp fresh parsley (finely chopped)

Instructions

  1. In a large baking dish, place the chicken thighs.
  2. Add the Greek yogurt, lemon juice, olive oil, salt, pressed garlic, black pepper, cumin, paprika, onion powder, red pepper flakes, and parsley on top. Mix well to coat the chicken entirely.
  3. Arrange the chicken in a single layer. Cover with plastic wrap and marinate in the fridge for up to 12 hours.
  4. Preheat your oven to 450°F (232°C). Remove the plastic wrap from the dish and bake the chicken for 25-30 minutes, or until it reaches an internal temperature of 165°F (74°C).
  5. After baking, broil for an additional 3 minutes to crisp up the edges. Let the chicken rest for 5 minutes before serving.

Notes

Allowing the chicken to marinate for longer (up to 12 hours) enhances the flavor. Use a meat thermometer to check for doneness.
