A delightful fusion of Mediterranean flavors, these succulent chicken meatballs are perfectly complemented by bright, zesty lemon orzo, making it a comforting meal for any occasion.

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 2 tablespoons lemon juice
  • Lemon zest for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, parsley, egg, garlic, oregano, salt, and pepper. Mix well.
  3. Shape the mixture into small meatballs, about 1 inch in diameter, and place them on a baking sheet.
  4. Bake in the preheated oven for 20-25 minutes, or until golden brown and completely cooked through.
  5. Meanwhile, bring chicken broth to a full boil in a large pot.
  6. Add orzo to the broth and cook according to package instructions until al dente.
  7. Once cooked, drain the orzo and transfer it back to the pot.
  8. Stir in lemon juice and season with additional salt and pepper to taste.
  9. Serve the meatballs over a bed of the lemon orzo, and garnish with lemon zest and parsley as desired.

Notes

Use freshly minced garlic for the best flavor. Don’t skip on the lemon juice; it brightens the dish.
