Deliciously fluffy Greek yogurt pancakes that are a healthier breakfast option, perfect for any occasion.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup Greek yogurt
  • ¼ cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter

Instructions

  1. Combine the flour, sugar, baking powder, and salt in a small bowl.
  2. Whisk together the Greek yogurt, milk, eggs, vanilla extract, and melted butter until smooth.
  3. Add the dry ingredients to the wet ones, mixing until just combined; don’t worry about lumps.
  4. Preheat a large nonstick skillet over medium heat and grease it with cooking spray or butter.
  5. Pour ¼ cup of batter onto the skillet and cook for about 2 minutes, until bubbles form on the surface.
  6. Flip the pancake and cook for an additional 1-2 minutes until golden brown.
  7. Repeat with remaining batter, greasing the skillet as necessary.
  8. Serve warm with toppings of your choice.

Notes

For different flavors, try adding chocolate chips, lemon zest, or pumpkin puree to the batter.
