A delightful and simple recipe for grilled lemon chicken, marinated to perfection with zesty lemon, garlic, and rosemary.

  • 4 boneless, skinless chicken breasts
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Zest of 1 lemon

Instructions

  1. Prepare the Marinade: In a bowl, whisk together the lemon juice, olive oil, minced garlic, chopped rosemary, salt, black pepper, and lemon zest until well combined.
  2. Marinate the Chicken: Place the chicken breasts in a zip-top bag, pour the marinade over them, and seal the bag tightly. Refrigerate for a minimum of 30 minutes, but up to 2 hours for maximum flavor.
  3. Preheat the Grill: Heat your grill to medium-high heat and lightly grease the grates to prevent sticking.
  4. Grill the Chicken: Remove the chicken from the marinade and place it on the hot grill. Cook for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  5. Rest and Serve: Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before slicing and serving.
