Ground Turkey Soup with Potatoes and Kale

A cozy, nourishing soup blending tender turkey, earthy potatoes, and vibrant kale, perfect for busy weeknights.

Ingredients

  • 1 pound ground turkey
  • 2 cups diced potatoes
  • 2 cups kale, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat.
  2. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
  3. Stir in the ground turkey, breaking it apart with a spoon, and cook until fully browned.
  4. Toss in the diced potatoes and pour in the broth. Increase the heat to bring everything to a boil.
  5. Once boiling, reduce the heat and add the chopped kale and dried thyme.
  6. Let the soup simmer for 20-25 minutes until the potatoes are tender.
  7. Taste and season with salt and pepper as desired.
  8. Serve warm, garnished with Parmesan cheese or with crusty bread.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. This soup also freezes well for up to 3 months.
