A hearty, one-dish meal that captures the essence of your favorite taco flavors in a comforting casserole form.

  • 1 lb ground turkey
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup cooked rice or quinoa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground turkey until browned, draining any excess fat.
  3. Add the black beans, corn, diced tomatoes, taco seasoning, and cooked rice or quinoa to the skillet. Stir everything together and heat until warmed through.
  4. Pour the mixture into a greased casserole dish.
  5. Spread salsa over the top and sprinkle with shredded cheese.
  6. Bake for 25 to 30 minutes, until the dish is bubbly and the cheese is melted.
  7. Garnish with fresh cilantro before serving hot.

Notes

This casserole can be customized with additional veggies or different proteins. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
