  • 1 package (about 24 oz) frozen hash browns, thawed
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 1 cup cooked breakfast sausage or bacon pieces
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons butter for greasing the pan

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the thawed hash browns in a large bowl until evenly combined.
  3. Whisk the eggs and milk together in a separate bowl until frothy.
  4. Add the cooked sausage or bacon, onion, bell pepper, salt, black pepper, and garlic powder to the hash browns, then pour the egg mixture over the top.
  5. Transfer the mixture into a greased baking dish, spreading it out evenly.
  6. For an extra cheesy topping, sprinkle additional cheese on top.
  7. Bake for 45-50 minutes, or until the eggs are set and the top is golden brown.
  8. Allow it to cool slightly before serving.
