Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup Greek yogurt
  • 1/4 cup coconut oil, melted
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup mixed berries (blueberries, raspberries, strawberries)
  • 1 egg (optional, for egg wash)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine whole wheat flour, almond flour, baking powder, and salt in a mixing bowl. Whisk until blended.
  3. Blend honey (or maple syrup), Greek yogurt, and melted coconut oil in a separate bowl until smooth.
  4. Gradually add the wet mixture to the dry ingredients. Stir gently until just combined; don’t overmix.
  5. Fold in mixed berries carefully to keep them intact.
  6. Roll out the dough on a lightly floured surface and cut into your favorite pastry shapes.
  7. Place the pastries on a baking sheet lined with parchment paper.
  8. Brush the tops with a beaten egg if desired.
  9. Bake for 15-20 minutes, or until golden brown.
  10. Allow to cool slightly before serving.

Notes

Store leftovers in an airtight container for up to 2 days at room temperature or refrigerate for up to a week. For optimal texture, reheat in the oven.
