  • 2 cups almond milk (or any non-dairy milk)
  • 1 cup blueberries (fresh or frozen)
  • 1/4 cup maple syrup (or agave syrup)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, whisk together the rolled oats, almond milk, maple syrup, vanilla extract, baking powder, salt, and cinnamon until evenly combined.
  3. Gently fold in the blueberries, taking care not to crush them during the process.
  4. Pour the mixture into the prepared baking dish, spreading it evenly with a spatula.
  5. Bake for 30-35 minutes, until the top is golden and the center feels firm when gently pressed.
