A refreshing and nutritious breakfast featuring creamy scrambled eggs, ripe avocado, and sweet strawberries.

Ingredients

  • 2 large eggs
  • 1 ripe avocado
  • 1 cup fresh strawberries
  • Salt and pepper to taste
  • Olive oil or butter for cooking (optional)

Instructions

  1. In a small non-stick skillet, heat your choice of olive oil or butter over medium heat.
  2. Crack the eggs into a bowl, add a pinch of salt and pepper, then whisk them together until well combined.
  3. Pour the egg mixture into the heated skillet. Stir gently with a spatula as the eggs begin to cook. Keep stirring until they’re softly scrambled and just cooked through—around 3 to 4 minutes.
  4. While the eggs are cooking, slice the ripe avocado in half, remove the pit, and scoop out the flesh with a spoon. Cut the avocado into wedges.
  5. Rinse the fresh strawberries, remove the stems, and chop them into halves or quarters, depending on their size.
  6. Once the eggs are cooked, plate them alongside the avocado wedges and strawberries.

Notes

For added flavor, sprinkle some chili flakes or fresh herbs on the eggs before serving.
