2 medium zucchini, spiralized into noodles
1 lb chicken breast, sliced
1 cup heavy cream or Greek yogurt
1 cup grated Parmesan cheese
2 tablespoons olive oil
3 cloves garlic, minced
Salt and pepper to taste
Chopped parsley for garnish (optional)
Instructions
Heat the olive oil in a large skillet over medium heat. Add the sliced chicken and cook until browned and cooked through, about 6-8 minutes. Push chicken to one side of the pan.
On the empty side of the pan, toss in the minced garlic and sauté for about a minute until fragrant.
Pour in the heavy cream (or add Greek yogurt off the heat) and bring to a simmer if using cream. Gradually stir in Parmesan until melted and smooth.
Toss in the spiralized zucchini noodles and cook for 2-3 minutes until heated through.
Adjust seasoning with salt and pepper to taste. Serve hot, garnished with chopped parsley if desired.

For a lighter option, substitute heavy cream with Greek yogurt. Adjust cheese types for variety.
