A nutritious twist on classic Alfredo, combining tender chicken, creamy sauce, and zucchini noodles for a healthy yet satisfying meal.

Ingredients

  • 2 medium zucchini, spiralized into noodles
  • 1 lb chicken breast, sliced
  • 1 cup heavy cream or Greek yogurt
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the sliced chicken and cook until browned and cooked through, about 6-8 minutes. Push chicken to one side of the pan.
  2. On the empty side of the pan, toss in the minced garlic and sauté for about a minute until fragrant.
  3. Pour in the heavy cream (or add Greek yogurt off the heat) and bring to a simmer if using cream. Gradually stir in Parmesan until melted and smooth.
  4. Toss in the spiralized zucchini noodles and cook for 2-3 minutes until heated through.
  5. Adjust seasoning with salt and pepper to taste. Serve hot, garnished with chopped parsley if desired.

Notes

For a lighter option, substitute heavy cream with Greek yogurt. Adjust cheese types for variety.
