A healthier take on classic Chicken Parmesan, featuring tender chicken, savory marinara, and melted cheese, perfect for weeknight dinners.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • ½ cup whole wheat flour
  • 3 large eggs
  • 1.5 cups shredded mozzarella cheese
  • 1.5 cups marinara sauce
  • 1 cup unseasoned whole wheat bread crumbs
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Butterfly the chicken breasts, then gently pound them to about ¼ inch thick.
  3. Set up three bowls: one with whole wheat flour, one with whisked eggs, and the third with breadcrumbs, Parmesan cheese, black pepper, basil, and parsley.
  4. Coat each chicken cutlet in flour, dip it in egg, and then cover it in the breadcrumb mixture.
  5. Place the breaded cutlets onto the prepared baking sheet. Bake for 30 minutes, flipping halfway through.
  6. Remove from the oven. Top each cutlet with marinara sauce and sprinkle on mozzarella cheese.
  7. Broil for an additional 2 minutes until the cheese is bubbly and golden.

Notes

Serve warm over pasta, on a bed of greens, or alongside roasted veggies. Can be prepared ahead of time and stored in the fridge.
