A nutritious twist on the classic Chicken Parmesan with crispy breaded chicken, savory marinara, and gooey melted cheese.

  • 1.5 pounds boneless skinless chicken breasts, butterflied into cutlets
  • 0.5 cup whole wheat flour
  • 3 large eggs, whisked
  • 1 cup whole wheat bread crumbs
  • 0.5 cup grated Parmesan cheese
  • 0.25 teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley
  • 1.5 cups marinara sauce
  • 1.5 cups shredded mozzarella cheese

Instructions

  1. Begin by butterflying the chicken breasts and pounding them to about 1/4 inch thick.
  2. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.
  3. Dredge each chicken cutlet in whole wheat flour, dip it into the whisked eggs, and then coat it in the mixture of bread crumbs, Parmesan cheese, black pepper, dried basil, and parsley.
  4. Arrange the breaded cutlets on the prepared baking sheet and bake them for 15 minutes.
  5. After 15 minutes, flip the cutlets over and bake for another 15 minutes until golden brown.
  6. Top each cutlet with marinara sauce and a generous sprinkle of mozzarella cheese. Broil for 2 minutes, until the cheese is bubbly and golden.

Notes

For a gluten-free version, swap whole wheat flour and breadcrumbs for almond flour and gluten-free breadcrumbs.
