  • 1 ½ cups all-purpose flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup Greek yogurt
  • ¼ cup neutral oil or melted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips
  • ½ cup milk

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare a muffin tin with paper liners.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until fluffy.
  3. In a separate bowl, blend the Greek yogurt, oil (or melted butter), eggs, milk, and vanilla until smooth.
  4. Pour the wet ingredients into the dry ingredients and gently fold them together until just combined – remember, don’t overmix!
  5. Fold in the chocolate chips, saving a small handful to sprinkle on top.
  6. Evenly distribute the batter among the muffin cups, filling each about 3/4 full.
  7. Bake for 18-20 minutes, until the tops are set and a toothpick comes out mostly clean.
  8. Allow the muffins to cool slightly before indulging!

Notes

For a healthier alternative, consider substituting half of the all-purpose flour with whole wheat flour or using a sugar alternative like coconut sugar.
