  • 1 cup shredded mozzarella cheese
  • 1/2 cup almond flour
  • 2 large eggs
  • 2 tablespoons erythritol or preferred sweetener
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your waffle iron as per the manufacturer’s instructions.
  2. Combine the shredded mozzarella cheese and almond flour in a mixing bowl until mixed well.
  3. Whisk together the eggs, erythritol, vanilla extract, baking powder, cinnamon, and salt in another bowl until smooth and frothy.
  4. Pour the wet ingredients into the dry mixture, stirring until thoroughly blended.
  5. Lightly spray the waffle iron with cooking spray. Pour half of the batter into the center of the heated iron.
  6. Close the waffle iron and cook for about 3-4 minutes or until golden brown.
  7. Carefully remove the chaffle and repeat with the remaining batter.
  8. Serve warm, topped with your favorite low-carb options like fresh berries or sugar-free syrup.

Notes

For added sweetness, top with Greek yogurt or powdered erythritol. For longer storage, keep in an airtight container in the refrigerator for 3-4 days or freeze after cooling.
