Ingredients

  • 1/2 cup assorted nuts (e.g., almonds, walnuts, cashews)
  • 1/2 cup seeds (e.g., sunflower seeds, chia seeds, flaxseeds)
  • 1/2 cup dried fruits (e.g., raisins, cranberries, apricots)
  • 1/2 cup nut butter (e.g., almond butter, peanut butter)
  • 1/4 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, assorted nuts, seeds, dried fruits, cinnamon, and a pinch of salt.
  3. In another bowl, mix together the nut butter, honey (or maple syrup), and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients, stirring until everything is thoroughly mixed.
  5. Scoop out portions of the mixture onto your baking sheet, flattening them slightly to form cookies.
  6. Bake in the oven for 10-12 minutes, watching for the edges to turn a lovely golden brown.
  7. Once baked, remove from the oven and let cool before enjoying.

Notes

Store in an airtight container at room temperature for up to one week. Can be frozen for longer shelf life; layer parchment paper between cookies to prevent sticking.
