Delicious and nutritious oatmeal bars packed with wholesome ingredients, perfect for breakfast or a snack.

Ingredients

  • 2 cups rolled oats
  • 1 cup almond flour
  • 1/4 cup maple syrup or honey
  • 1/4 cup coconut oil, melted
  • 1 cup frozen berries (mixed or your choice)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, almond flour, baking powder, and salt.
  3. In another bowl, whisk together the melted coconut oil, maple syrup (or honey), and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients. Mix until everything is well combined.
  5. Gently fold in your chosen frozen berries, ensuring they’re evenly distributed throughout the mixture.
  6. Line a baking dish with parchment paper. Press the mixture firmly into the dish, creating an even layer.
  7. Bake for 25-30 minutes or until the top turns golden brown.
  8. Allow to cool completely before cutting into bars for serving.

Notes

Store the bars in an airtight container at room temperature for up to a week, or refrigerate for up to two weeks. They can be frozen for up to three months.
