A healthier twist on classic Chicken Parmesan, featuring whole wheat breadcrumbs and reduced-fat cheese.

  • 4 boneless, skinless chicken breasts
  • 1 cup whole wheat breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 cups marinara sauce (homemade or store-bought)
  • 1 cup shredded mozzarella cheese
  • Olive oil spray
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry and season them with salt and pepper to taste.
  3. Mix together the whole wheat breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning in a large bowl.
  4. Dip each chicken breast into the breadcrumb mixture, ensuring they are coated well on all sides.
  5. Lightly spray a baking sheet with olive oil and place the coated chicken breasts on it.
  6. Bake in the oven for about 20-25 minutes, until the chicken is golden and cooked through.
  7. Remove the chicken from the oven and spoon marinara sauce over each piece. Sprinkle shredded mozzarella cheese on top.
  8. Return to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
  9. Let the chicken rest for a few minutes before serving.

Notes

For extra crunch, consider broiling the chicken for a minute or two at the end of the baking process. You can also use eggplant slices or portobello mushrooms for a vegetarian version.
